Prepare and sear
- Pat the chicken thighs very dry and season both sides with salt and pepper. Preheat oven to 375°F. Heat oil in a 12-inch ovenproof skillet over medium-high heat until shimmering.
- Place chicken skin-side down and sear without moving for 5–7 minutes until deep golden brown; flip and sear the second side for 2 minutes. Transfer chicken to a plate.
Make the sauce
- Reduce heat to medium and add butter to the skillet, scraping up brown bits. Add sliced shallot and cook until soft, about 3 minutes, then add garlic and cook 30 seconds.
- Pour in apple cider and chicken stock and bring to a simmer; reduce the liquid by about one-third, 6–8 minutes, until aroma is concentrated.
- Stir in apple wedges, Dijon mustard, and thyme, then nestle the seared chicken thighs skin-side up into the skillet.
Roast and finish
- Transfer the skillet to the 375°F oven and roast until chicken reaches 165°F in the thickest part, about 18–25 minutes depending on thigh size. Remove skillet and let chicken rest 5 minutes.
- Return the skillet to the stove over medium heat. If sauce is thin, whisk in the cornstarch slurry and simmer 1–2 minutes until glossy and thickened. Stir in lemon juice and adjust seasoning.
- Serve chicken with apples and spooned sauce, or finish with a splash of cream if using.
Notes
Patting chicken dry before searing and using a 12-inch ovenproof skillet keeps skin crispy and cooks evenly. If sauce seems thin, reduce cider more before roasting or finish with 1 teaspoon cornstarch slurry. Leftovers keep 3 days refrigerated; reheat gently to 165°F.
