Double Chocolate Zucchini Bread

A moist, deeply chocolate loaf made with Dutch-process cocoa, shredded zucchini, and semisweet chips for a tender crumb and rich chocolate flavor.

Ingredients
  

  • 1 3/4 cups 220g all-purpose flour
  • 3/4 cup 75g Dutch-process cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 1 cup 220g packed light brown sugar
  • 1/2 cup 120ml neutral oil (canola or vegetable)
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups shredded zucchini loosely packed and squeezed (about 1 medium zucchini)
  • 1 cup 170g semisweet chocolate chips
  • 1/2 cup 120ml milk, optional and only if batter seems dry
Optional mix-ins
  • 1/2 cup chopped walnuts or pecans optional
  • 1/4 cup mini chocolate chips optional

Equipment

  • 1 9×5-inch loaf pan
  • 1 Box grater or food-processor shredder
  • 1 Large mixing bowl
  • 1 Wire cooling rack

Method
 

Prep
  1. Preheat the oven to 325°F and place a rack in the center. Grease a 9×5-inch loaf pan and line with parchment, leaving a 1–2 inch overhang.
Zucchini
  1. Shred zucchini on the coarse side of a box grater, place shreds in a clean towel, and squeeze gently to remove excess water until moist but not dripping.
Dry ingredients
  1. Whisk together flour, Dutch-process cocoa, baking powder, baking soda, and salt in a medium bowl to remove lumps.
Wet ingredients
  1. In a large bowl whisk oil, eggs, vanilla, and brown sugar until smooth, then add the dry ingredients and fold gently until just combined.
Combine
  1. Fold in the shredded zucchini and semisweet chocolate chips (toss chips in 1 tablespoon flour first if using large chips). If batter looks dry, stir in up to 1/2 cup milk a tablespoon at a time; the batter should be thick and scoopable.
Bake
  1. Transfer batter to the prepared pan, smooth the top, and bake at 325°F for 50–65 minutes. Check at 50 minutes with a thin skewer—the center should have moist crumbs but no raw batter. Tent with foil if top browns too fast.
Cooling
  1. Cool the loaf in the pan on a wire rack for 15–20 minutes, then lift out with parchment and cool completely before slicing for clean cuts. Store cooled loaf wrapped at room temperature for up to 3 days or freeze wrapped for up to 3 months.

Notes

Squeeze zucchini well to avoid a soggy center; lower oven temp to 325°F if the top browns too quickly. Toss chocolate chips in a tablespoon of flour to prevent sinking. For a richer loaf, substitute melted unsalted butter for the oil in equal measure.
