Ingredients
  

  • 3 pounds Yukon Gold potatoes peeled and cut into 1-inch pieces
  • 4 large eggs
  • 1 cup full-fat mayonnaise
  • 1/3 cup buttermilk or whole milk
  • 2 tablespoons yellow mustard
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons granulated sugar
  • 1 teaspoon kosher salt plus more to taste
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 cup chopped dill pickles
  • 2 tablespoons sweet pickle relish optional
  • 2 tablespoons finely chopped celery optional for crunch
  • 2 tablespoons sliced scallions for garnish
  • Paprika for garnish optional

Equipment

Method
 

Cook potatoes
  1. Place peeled, cut potatoes in a 6–8 quart pot and cover with cold water by 1 inch; bring to a boil over high heat, reduce to a gentle simmer and cook 10–12 minutes until a fork slides in with slight resistance.
  2. Drain the potatoes in a colander, return them to the warm pot off the heat, cover, and let steam for 2–3 minutes; transfer to a large heatproof bowl and allow to cool slightly.
Prepare eggs
  1. Place eggs in a small pot, cover with cold water, bring to a boil, then cover and remove from heat; let sit 10 minutes, then transfer to an ice bath and cool completely before peeling and chopping.
Make dressing
  1. In a medium bowl whisk together mayonnaise, buttermilk, yellow mustard, apple cider vinegar, sugar, salt, and pepper until combined; fold in chopped dill pickles and optional sweet relish and celery.
Combine and finish
  1. With the potatoes warm (not hot), add half the dressing and gently fold to coat; add chopped eggs and fold again, then add more dressing to reach the desired scoopable consistency—avoid oversaturating.
  2. Refrigerate at least 1 hour before serving to let flavors meld; before serving, taste and adjust salt or a small splash of vinegar, then garnish with sliced scallions and a sprinkle of paprika.

Notes

Start potatoes in cold water and finish with a 2–3 minute steam off heat to prevent mushiness. Measure dressing and add gradually—about 1 cup dressing per 2 pounds potatoes is a good target. Store in an airtight container for up to 4 days; do not freeze.
