Fudgy 4th of July Brownies with Crackly Top

Ingredients
  

  • 6 ounces semisweet chocolate chopped
  • 10 tablespoons unsalted butter 1 stick + 2 tablespoons
  • 1 1/4 cups granulated sugar
  • 2 tablespoons light brown sugar packed
  • 2 large eggs
  • 2 large egg yolks
  • 3/4 cup unsweetened cocoa powder sifted
  • 3/4 cup all-purpose flour
  • 1 teaspoon fine sea salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons chopped chocolate or chocolate chunks
  • 1 cup chopped walnuts or pecans optional
Optional topping
  • Red and blue sprinkles or fresh berries for serving optional

Equipment

  • 1 9×13-inch baking pan
  • 1 Heatproof bowl and medium saucepan (for double boiler)
  • 1 Large mixing bowl and rubber spatula
  • 1 Instant-read thermometer (optional)

Method
 

Prepare the pan and preheat the oven
  1. Preheat the oven to 350°F and line a 9×13-inch pan with foil or parchment, leaving an overhang for easy removal; set a rack in the middle position.
Melt chocolate and butter
  1. Place chopped semisweet chocolate and butter in a heatproof bowl over simmering water and stir until just melted and smooth, then remove from heat and cool for 3–4 minutes until warm but not hot.
Whisk eggs and sugar
  1. Whisk the eggs, egg yolks, granulated sugar, and light brown sugar in a large bowl until thick and slightly ribboning (2–3 minutes with a mixer or 4–5 minutes by hand).
Temper and combine
  1. Slowly drizzle one-third of the warm chocolate into the egg mixture while whisking constantly to temper the eggs; fold in remaining chocolate with a spatula, then add cocoa, salt, vanilla, and fold in flour until just combined.
  2. Fold in chopped chocolate chunks and nuts if using, taking care not to overmix.
Bake
  1. Spread batter evenly in the prepared pan and bake at 350°F for 20–24 minutes; start checking at 18 minutes—edges should be set, center should jiggle slightly and a toothpick should come out with moist crumbs.
  2. Remove from oven and let the pan rest on a wire rack for 25–30 minutes to finish cooking gently and develop a crackly top.
Cool and serve
  1. After the warm rest, lift the brownies from the pan using the overhang and transfer to a cutting board; for cleaner slices chill for 15–20 minutes before cutting into 16 squares and garnish with sprinkles or berries if desired.

Notes

For a glossy crackly top, whisk the eggs and sugar until slightly ribboning and temper with warm chocolate. Slightly underbake using the moist-crumb toothpick test; let the pan rest to finish cooking. If using a dark pan, reduce oven temperature by 10–15°F and monitor baking time.
